Sumatra processes their coffee in a slightly different way to work in harmony with their extra humid and wet environment. The difference is that their hulling (removing the parchment) takes place much earlier in the process, resulting in the coffee being dried at a faster rate. This is called “Giling Basah” or in English, “Wet-Hulled.”
