Meet the Bean
Our featured roast this month is from San Marcos in northwestern Guatemala and is an exciting addition from this farm. This coffee is grown organically, wet processed, then dried on raised beds. They are located at nearly 1600 meters above sea level.
The Inside Scoop
A varietal is a type of coffee, similar to the many varieties of apples (Granny, Honey Crisp, Red Delicious). Geisha is one of those types and has been growing in popularity because of its sweet, floral notes. The plant itself is from Ethiopia and has become highly sought after.
We had a lot of fun trying to find the perfect roast for this complex coffee. After many sample roasts and cuppings, we settled on a medium to highlight the beautiful notes of hibiscus, pink grapefruit and subtle hint of marcona almonds.
