Meet The Bean
"Tabi" is a combination of Bourbon, Typica and Timor, an experimental hybrid aiming to develop a high quality, more resilient coffee tree. Tabi means "good" in the Guambiano (a native Colombian tribe) dialect, and they are right, the success of Tabi is taking hold and this natural is one to be excited about. After being fermented for 24 hours, allowing the sugars to peak, its then dried for 7-16 days on raised beds. No small feat Colombia's humid environment (which we know a little bit about as we creep into Hawai`i Summer).
The Inside Scoop
You will find the Tradition roasting to highlight notes of star fruit and papaya, underpinned by floral notes. If you conjured up the image of Mr. Kool-Aid with this label and description, you landed in the same mindset as we did..."Oh Yeah!"
